It’s said that there are five main elements of Vietnamese food; rice; herbs; meat; fruit and most importantly, fish sauce!
Greatly admired for its fresh ingredients, on our Vietnamese workshop we aim to teach students how to capture these vibrant flavours in a dish.
Our students were guided by Chef Damien, and assisted by our Fáilte Ireland Commis Chefs in training, they set to work on a variety of dishes including delicious fresh summer rolls and mouthwatering curry.
The Vietnamese use minimal amount of dairy products and oil making it one of the healthiest cuisines in the world.

What’s great about these rice paper rolls is that you can pretty much fill them with anything that you would like! They’re like the Vietnamese version of sushi and they’re both wonderfully fresh and surprisingly filling.

Low on fat but certainly not skimping on taste – this noodle salad is perfect for when you’re sick of staring at plain greens.

With the vibrant yellow turmeric streaking through the grains – how can you resist this yellow rice??


One of the healthiest food options for sure, it’s no wonder why this cuisine is fast emerging as the world’s favourite.
